Paprika Chicken w/ Shallot Spinach

I have been a fan of cooking chicken on high heat because I love the crispy outside it produces.  I like this dish in particular because it is so colorful and of course easy 🙂

What You Will Need:
1.5 lbs Chicken Breasts
3 Tbsp Butter
Salt
Pepper
Garlic Powder
Paprika

Shallot Spinach:
1 Shallot, Chopped
3 Tbsp Butter
1/2 Cup White Wine
4 Cups Fresh Spinach, about half a bag

Preheat oven to 450.  Melt 3 tbsp of butter in a bowl, I popped it in the microwave for about 30 seconds, and brush each side of chicken.  Sprinkle salt, pepper, garlic, paprika over the tops of each breast.  Bake for 25 to 30 minutes.  When you have about 15 minutes left on the timer start the spinach…

Saute butter and shallot for about 5 minutes.  Add the wine and cook down for about 10 minutes.  Add a pinch of salt, pepper, paprika and stir.  Add spinach and cook down for about 5 minutes.

When the chicken is done serve and enjoy! xoxoxo
