My husband really likes Chipotle’s Barbacoa Beef! While I like to indulge in a little fast food every now and then I like to take those “comfort foods” and let them inspire me to create my own homemade versions, which are most likely better than the mass produced version!
What you will need:
3 lbs chuck roast (fat trimmed), cut into chunks
5 cloves garlic, minced
1 small white onion, finely chopped
1 Tablespoon ground cumin
1 Tablespoon dried oregano
1 cup beef broth
1 (7oz) can of Chipotle Chiles in adobo sauce, chopped (you can lessen it if need be to tame the spice!)
1 (4-ounce) can chopped green chiles
What I did was I took everything and placed in in a Zip Lock bag and let it sit in the fridge overnight. This is a optional step but I wanted the beef to absorb as much flavor as possible.
Next dump the contents into a slow cooker and cook for 8 hours on low.
Once the 8 hours are up you are going to separate the beef, onions, and peppers from the liquid by straining it. Reserve the liquid!
Place everything back into the slow cooker and start to shred the beef.
Add back in some of the liquid to keep the beef moist but not so much to make it soup! (use your judgment)
Mix everything together-top it with some fresh cilantro and serve!
