This is another dish that some leftover ingredients from my fridge. It comes with a sauce that will make you want to lick the pan 🙂
What You Will Need:
1 Lb Chicken Tenders
1 Jar Marinated Artichoke Hearts Quartered and Packed with Oil (like Victoria Brand), Removed, Rinsed, and Chopped, (do not throw away the jar of oil right away)
1/2 Yellow Onion, Chopped, About 1 cup
1 Medium Tomato, Chopped
1/2 Cup Olive Oil
1 Cup White Wine, Dry Wine
4 Tbsp of Heavy Cream
1 Tsp Thyme
1 Tbsp Salt
1 Tbsp Pepper
Heat a pan over med heat and add the olive oil. Season both sides of each piece of chicken with some salt and pepper and place them in the pan. Brown them on each side, cooking them about 2-3 minutes each side or until browned, remove them and set aside.
In the same pan add the onion and cook for about a minute or two then add the white wine, tomato, artichokes, thyme, salt, and pepper. Also pour in about a Tbsp of the artichoke oil from the jar they came in. You can discard the rest now 🙂 Cook down for about 15 minutes on med heat. Then add in the heavy cream and lower to a simmer for about 5 minutes.
Soooooo nice and bubbly….
Add the chicken back in and cook on med heat for another 10 minutes until the chicken is cooked through and no longer pink on the inside. I can always usually tell when chicken is done by pushing down on it with my cooking spoon. It will have a hard feeling to it. Also if I am really unsure I will cut into them but I normally don’t like to do that because then you release all the juices and the chicken could then dry out.
