Pasta Swapping!!

I will start off with the obvious that pasta has been and is a huge part of my life.  I have most likely eaten every kind there is! Except the vegetable kind, but that changed today! The day started out pretty normal when out of the blue I got the email blast that I have a 20% offer from Bed Bath and Beyond awaiting me in my account.  Normally I have enough will power to shy away from these sort of notifications but today wasn’t one of them.  I decided today was the day to buy a vegetable spiralizer and make some VEGGETTI for dinner!! I ordered it online and ran to pick it up in store.  I went with a smaller one and not one that takes up much space.  I couldn’t wait to get home and try it.  I had some sausage so I decided to make one of my pasta dishes but just substitute the regular pasta with my awesomely spiralized Zucchini!  Came out great and learned some lessons for next time as well.

La Festa Di San Gennaro!!!

I had an amazing night walking around New York’s annual San Gennaro Feast that takes place every year in the area of Manhattan called Little Italy.  Little Italy is pretty much self explanatory, it’s the section of the city where Italian immigrants settled in the early 19th century after they came over in search of the American Dream!  My family settled in East Harlem, another popular Italian neighborhood, totally opposite of where Little Italy sits but I guess we just did our own thing 🙂

This feast takes place every September and pays homage to San Gennaro, the patron saint of Naples.  It started in 1926 by newly arrived Italian immigrants from Naples looking to carry on the tradition in the US to honor the day that the patron saint was martyred for the faith on September 19th, 305 AD.  Since then the feast has grown from being celebrated on 1 day into an 11 day event and it is the oldest and most famous of the feasts!

I enjoy going to this feast every year to not only experience the tradition but to also experience the food!  There are just a ton of street vendors displaying the most amazing looking dishes from savory sausage and peppers to sweet and delightful cannoli’s and my favorite ZEPPOLE’s!! So much fun and a leeeeetle too much wine but hey life is short!!

Mixing It Up!!

Hello!!!

So tonight I wanted to make a standard meatloaf like I normally do with ground beef that I need to use immediately but my husband challenged me to make something “different”.  Ground beef is not one of those things that can exactly be made into a ton of different stuff…theres meatloaf, hamburgers, tacos….what else right?! So I was looking around and came across beef stroganoff.  This is normally prepared with beef chuck but I found some people DID use ground beef instead so I decided to let it inspire me to create tonight’s meal! Also the best part was it only took me ONE POT! 🙂

Comfort Meals

Sometimes your in need of a little comfort food.  Food that feeds the soul and sticks to your ribs! Since it is only the two of us now when I make my Sunday gravy, yes I call it gravy, I usually have a lot of leftover gravy that I need to decide to either freeze or use.  I like to use it in other meals throughout the week such as a homemade pizza.  This week I used it for eggplant parmesan.  I also made a little appetizer to go along with it.  So throw on some sweat pants and dig in!

Mushroom Meatloaf Monday!

Hello!!! So I am sure by now you know that I am a fan of alliteration!! Tonight is no exception.  You also may know by now of my husbands love for mushrooms, ugh, so here I went again incorporating them into another dinner.  I normally do not prefer mushrooms but once again they surprised me and I actually enjoyed them!!  (I will never admit that to him though :))  This meal definitely turned around our Monday blues and made a great start to the week.
