Sunday mornings are a time to be lazy and sleep in. Its also before the time you start getting anxiety about it almost being Monday. I like to cook a big breakfast on sunday. A little mini celebration to end the week, or nurse a hangover haha. I like to default to my low and slow scrambled eggs. They always deliver!

Blue Cheese is the Star of Tonight’s Show!!!
It is a little obscene how much I love cheese. It’s definitely not normal but it is what it is! One of my favorites is blue cheese so it is the star of this dish tonight. I wanted to make a stuffed chicken and immediately thought to use ricotta cheese, but why does ricotta have to have all the fun and be the center of attention?! It’s the star of Raviolis, Eggplant Parmesan, Lasagna, Stuffed Shells…etc…it’s a pretty conceited cheese and it was definitely shocked when it saw me reach behind it to grab my crumbled blue. Sorry Ricotta your not invited tonight and you can’t sit with us!!!!
Drunken Tuesday!!
Good Evening!!!
Just to be clear the only thing that got drunk tonight were the mushrooms in my mushroom sauce, unfortunately. The sauce however was so creamy and delicious I think we almost felt drunk with happiness! It’s funny too because I am normally weird about mushrooms. Not sure why I just usually don’t prefer them, but my husband loves them, and with marriage comes compromise right? So I had to find a way to incorporate them into our meals in a way that I would actually enjoy eating them. Apparently the result is I only like them when they are drunk!! haha ok I will stop with the “drunk” jokes-it’s that time of night where I get over tired and a bit delirious 🙂

Okay so get your mind out of the gutter because this post is just the opposite of what the subject MAY lead you to believe. It’s the end of a work week, I have worked my butt off, i’m exhausted, cranky, and I need to eat-So quickie pasta it is!!! This Xtina original was again concocted utilizing ingredients that I just happen to have on had that worked out so well that it gets it’s own name and posting 🙂

I hope everyone had a great holiday weekend celebrating Easter and Passover. I love the time I get to spend with my family, and of course theres the food!!
