This is one that incorporates one of my FAVORITE cheeses in the WHOLE WORLD-Blue Cheese!! Complete with it’s best friend, bacon, this one is a keeper for sure!
What you will need:
For the Chicken:
1lb of thin chicken cutlets (I bought Perdue-had 6 cutlets in it)
1 cup of blue cheese
5 garlic cloves
1/2 cup bread crumbs
1 egg
6 bacon slices
Salt
Pepper
For the Gravy:
2 tbsp of butter
1 cup of chicken broth
1 tsp of thyme
Salt
Pepper
1 tbsp of flour

Meat Mallet
Food Processor
First what your going to do is make your stuffing. Place the garlic cloves, whole, in the processor first-give them a couple of pulses-then add the blue cheese and do the same-then the bread crumbs. You should end up with a crumble like so:

Now you are going to add your egg-the egg is a very versatile ingredient, it’s used in sweet baking and savory dishes, you can use the whites separate from the yolks and vice versa for many different dishes, but for this we are going to use it for it’s most common use which is to BIND our stuffing!!! So throw it in and mash it all up-see so pretty 🙂
Okay now here comes the fun part-your going to lay out two long pieces of plastic wrap, one for the bottom of the cutlet and one for the top of the cutlet. Lay a cutlet on the bottom piece and salt and pepper both sides-keep in mind blue cheese is salty so go a little lighter on the salt and add more pepper. Lay the other piece of plastic wrap on top of the cutlet like so:
Now take that mallet and take out all your frustrations on that piece of chicken!!! haha jk don’t completely obliterate it-just give it 5 or 6 good taps so it’s thinner and more spread out-This just makes the chicken more pliable in my opinion. If you feel your chicken can be wrapped without it then you can omit this step.
Your going to then take a scoop of the stuffing and place it in the middle of the chicken and with the back of the spoon just spread it out a bit. Then roll up the chicken and wrap it with a piece of bacon like so:

Finish rolling up the rest of the chickens and place them in a LIGHTLY oiled tin foil covered pan.
stick these in a 400 degree oven for 30-35 minutes until the chicken is no longer pink and juices run clear.
…….While the chicken is now cooking…….
Time to make the gravy-this is super easy and is done really fast so you may want to wait until you have about 10-15 minutes left on the chicken.
First melt the butter in a pan-then add the chicken broth, thyme, dash of salt and pepper, and bring to a simmer for about 10 minutes. Then while your still simmering- add a LITTLE AT A TIME add your tbsp of flour-stirring constantly while adding to avoid clumping. in a few minutes
your liquid is going to turn into creamy deliciousness!!
Now When your chicken is done plate it and drizzle this gravy right on top!
