Cauliflower Pizza

A little bit of a labor of love but worth it for the times when you need Pizza to be on the “lighter” side 🙂

What You Will Need:
1 Large Head of Cauliflower, chopped into florets
1 Egg
1 Tbsp Dried Oregano
1 Tbsp Garlic Powder
1 Cup Parmesan Cheese
1/4 Tsp Salt
1/4 Tsp Pepper
1 Cup Marinara Sauce
1 Cup Shredded Mozzarella (or more if you like!)
Any Toppings, I used Pepperoni here

Equipment:
Food Processor
Clean Dish Towel
Large Bowl, preferably with cover
Pizza Stone, works best but a regular pan work well too
Parchment Paper

First you have to cook the cauliflower.  Place the florets in a large bowl, I used a large pyrex bowl that came with a lid, fill the bowl with water so the florets are covered, cover the bowl and cook in the microwave for 5-6 minutes.  Be careful when removing from the microwave as it will be hot!!! Drain the florets and place into the food processor, and pulse until you get a grain like texture.  Now here comes the labor part…

Flip the contents of the food processor onto your clean dish towel and fold all the sides up so you have the pulsed cauliflower all contained in a tight ball.  Standing over your sink you are going to twist the towel while squeezing the cauliflower ball, and attempt to strain AS MUCH moisture as possible from the ball of pulsed cauliflower.  You will be surprised at how much water comes out!  Once it gets to a point where you feel there is not much more moisture place the contents in a bowl.

Pre-Heat your oven to 450.  Mix in the egg, oregano, garlic, salt, pepper, and parmesan cheese until everything is incorporated and shape it into a nice ball.  Place some parchment paper over your pizza stone or baking sheet and form the ball into a pizza crust on top of the parchment paper, like I did below:

Place in pre-heated oven and cook for about 15-20 minutes, monitor it throughout, you are basically looking for it to just get harder and more crust-like.  Carefully remove from oven and top with your sauce, cheese and toppings, and pop it back into the oven for another 10 minutes or so until the cheese has melted and everything looks amazing.  Remove and cool for about 5-7 minutes.  Cooling is IMPORTANT with any pizza, I know the feeling where you just want to eat it but you also don’t want a huge sloppy mess 🙂
