Chicken and Couscous Stuffed Peppers

I put a Mediterranean spin on a classic savory dish.  Instead of ground beef I substituted chicken for a lighter taste.  The result is delicious 🙂

What you will need:
4 large bell peppers
1 lb of chicken tenders
1/2 white onion, chopped
1 28 oz can whole peeled tomatoes
1 package of Couscous (I used Near East Parmesan flavored)
1/4 cup of parmesean cheese
4 oz of mozzarella cheese
Salt
Pepper
1 tsp Thyme

First off your going to slice the top off of your peppers and gut the insides. Ditch the stem and save the tops for later.

Wash the peppers and get them in a pot full of water with some salt and cook them on the stove until they start to boil.  In the meantime start preparing the Couscous, according to the package instructions and now onto the chicken…..

Salt and pepper all sides, add some oil to a pan, and toss em in

Cook them on med heat until they are done, remove from pan onto a dish and set aside, then add in your onion and chopped pepper tops to the same pan, sprinkle on some salt and pepper, and let cook until tender…the peppers add such pretty coloring 🙂

By now your couscous and peppers should be boiling.  If so remove couscous from heat and set aside and strain peppers and place them in a baking dish and sprinkle the inside of each with salt

Now start shredding the tenders with 2 forks, take one fork to hold the chicken and drag the other fork against the chicken to create ‘shreds’, once shredded place back into the pan with the onions and peppers and stir together.

Open the can of tomatoes and pour some of the juice in with the baking dish with the peppers, you just want to line the bottom.

Chop up the tomatoes and place them and the remaining juice from the can into the pan and mix it all together, with some more salt and pepper and the Thyme, and cook together for about 15 minutes. Time Saving Tip: you can also just buy a can of crushed tomatoes and skip the chopping step and just toss everything in the pan.

Add in the Couscous and Parmesan cheese and mix until everything is incorporated.  Then stuff the mixture into the peppers and place 1oz of mozzarella cheese on top of each pepper.  Bake at 350 until cheese is nice and bubbly on top, about 15-20 minutes.
