Chicken Pot Pie

A nice warm, hearty, comforting meal for a cold fall/winter night! 🙂

What you will Need:
1 lb Chicken Breast, Cubed
2 Cups Peas
2 Cups Sliced Carrots
2 Cups Chopped Celery
1 Can Chicken Broth (about 14.5 oz)
1 Cup Milk
4 tbsp Flour
6 tbsp Butter
1 Small Onion
2 Cups Shredded Cheddar Cheese
4 Cups Water
Salt and Pepper, to taste
1 box of (2) 9in Pie Crusts

Pre-heat your oven to 375 and line a deep pie pan with one of the pie crusts, remember to press it all along the edges and on the bottom, set it aside.

Then throw your peas, carrots, celery, and chicken into a large saucepan and add the water, add some salt and pepper as well and mix around a bit.  Bring to a boil and cook covered for 15 minutes, drain contents and pour it into the pie pan on top of the layer of crust.

On medium heat, Melt the butter in a saucepan and add the onions and some salt and pepper, cook until onions are soft.  Then slowly add the flour, one tbsp at a time and continuously stir until flour is incorporated and there aren’t any lumps.  Side Bar: I have non-stick pans so when incorporating flour or anything else that calls for a whisk I just use my trusty wooden spoon, it allows me to stir quickly as I need too without ruining my pans. After the flour is incorporated you’re going to add in your chicken broth and milk, again slowly, one at a time, and continuously stirring.  Then let it sit for a minute and simmer so it can start to thicken up.  THEN comes my FAVORITE part, the CHEESE!! Add it in slowly as well, while stirring until it is all melted.  let it simmer for another minute or 2. At this point give the sauce a taste and see if it needs more salt and pepper.

Pour the sauce right on top of the chicken mixture in the pie pan then top with the other pie crust and close it up!  Add some slits to the top so it can breath.  I placed my pie pan on top of a cookie sheet because I have experienced some of the sauce escaping the pie while cooking so I would suggest you do the same.  Cook for about 30 minutes, until crust is golden.
