These tostadas are SO GOOD!! They also come out so beautiful that everyone will think you spent all day on them, and that’s okay. 🙂
What You Will Need:
1 Lbs of Chicken Sausage (I bought hot and sweet combined)
1 Medium Onion, Sliced
2 Tbsp Olive Oil
1 Package of Corn Tostadas
Sauce:
2 Tbsp Dried Cilantro
4 Garlic Cloves
1/4 Cup Olive Oil
1/2 Tsp Salt
2 Tbsp Fresh lemon Juice (you can also use lime if you have it)
Toppings (Optional):
Handful of Cherry Tomatoes, about 5 or 6, sliced
1 Cup Cheddar Cheese, Shredded
First you are going to make the cilantro sauce. Place all sauce ingredients (cilantro, garlic, olive oil, salt, and lemon juice) into a food processor, or blender, and pulse until garlic is fully chopped and ingredients are all mixed together. Set aside.
Heat 2 tbsp olive oil in a pan on med heat. Cook onions for about 3 minutes, while the onions are cooking remove the chicken from their casings by slicing it right down the middle and removing the insides. Add it to the pan and cook for 10 more minutes. Add 2 tbsp of cilantro sauce and cook for an additional 20-25 more minutes, until chicken is cooked, stirring occasionally.
Plate by laying out the tostadas, top with chicken/onion mixture, your toppings, and drizzle some more cilantro sauce on top. Then take some pics, cause they are that pretty!
