Great edition to any BBQ or gathering. It is also surprisingly light tasting considering the starchy ingredients.
What You Will Need:
Salad:
2 Lbs Fingerling Potatoes
2 Cups of Plain Couscous, Prepared
1/2 Red Onion, Sliced
1 Small Container Cherry Tomatoes, Sliced
Dressing:
2 Tbsp Olive Oil
1 Tbsp Red Wine Vinegar
1/4 Cup Mayonnaise
1/4 Cup Spicy Brown Mustard
1/2 Tbsp Worcestershire Sauce
1/2 Tsp Apple Cider Vinegar (optional, if you don’t have it I think you will be ok)
Salt and Pepper to Taste
Place potatoes in a pot and fill it with water. Bring it to a boil and boil potatoes for about 10 minutes until soft. Test them by sticking them a fork and if you can stick them easily then they are done, remove from heat, strain the water out, and set them aside to cool.
Meanwhile, toss together the onion, cherry tomatoes, and couscous together in a large serving bowl. Once the potatoes are cooled then slice them in half, or cube them depending on the size, and toss them in the same bowl.
In a separate mixing bowl combine all the dressing ingredients and whisk together well, and add salt and pepper to taste, I added about a pinch of each and it was fine but you may like more or less.
Once done add it to the bowl with the other ingredients and mix together so everything gets coated with the dressing.
