Eggnog Cookies

I came up with these because I had extra eggnog leftover and needed something to do with it.  These cookies have more of a spongy texture and go great with a tall glass of milk 🙂

What You Will Need:
1 Cup Eggnog
1 Egg
1 Cup sugar
1 Cup butter
1 Tsp salt
1 Tsp baking soda
1/2 tsp cinnamon
1/2 tsp rum extract
3 cups flour
1/4 tsp nutmeg
Optional: Red and Green sugar sprinkles

Combine the flour, salt, and baking soda and set aside.

Mix butter and sugar in a stand mixer on 2 speed, stop scrape sides, add egg, eggnog, rum extract and mix on speed 2, then add cinnamon and nutmeg, mix for 30 seconds, add flour mixture slowly until all mixed.  Remove bowl, cover with plastic wrap or foil and refrigerate for 1 hour.

Preheat oven to 375.  Line a baking sheet with parchment paper and piece by piece start balling the dough and lining the parchment with them.  Should be about 2 tbsp each but I always wing it so some of my cookies come out are bigger than others.  Bake for about 12-15 minutes until tops of cookies are browned, be careful not to burn the bottoms!

Remove and sprinkle with some festive sprinkles and enjoy! xoxoxo
