Ground Beef Stroganoff

A hearty one-pot wonder that will not only hit the spot but save some clean up time with the dishes!

What You Will Need:
1 Lb ground beef
5 cloves of garlic, Chopped
1 Onion, Chopped
1 8oz Package of Cremini Mushrooms, Sliced
4 Cups of Beef Broth
1 lb Rotini Pasta, or Penne would work well too
1 tbsp Cream Cheese
1/2 tbsp Paprika
Salt
Pepper
Olive Oil

Lightly coat the bottom of a large pot, like a pasta pot, with olive oil in pot then throw in the mushrooms with some salt and pepper and cook until tender, about 5 minutes.  Then remove them and set them aside until later.

Again lightly coat the bottom of the pan with more olive oil then cook the onion for about 5 minutes or until translucent then toss in the garlic for another minute and stir around for another minute or so.  Then add in the ground beef and cook until browned then mix in the paprika.

Add in the beef broth and pasta and bring to a boil then cover.  its going to take about 10-15 minutes for the liquid to be absorbed…we aren’t making soup here!!! So go switch the laundry, pour a glass of wine, walk the dog…ok don’t go that far…you are gonna wanna stir it like every 2-3 minutes so stay local.  Once the liquid is mostly absorbed, and it becomes more of a creamy mixture remove from heat.  Add back in the mushrooms and cream cheese and mix until the the cream cheese is melted and incorporated.
