Low and Slow Scrambled Eggs

Low and slow is the way to go when cooking these eggs. Its what gives them their silky delicious texture and flavor.  Your sure to have a good morning with these!!

What you will need:
5 eggs
1/2 white onion, chopped
1/2 cup whole milk
1 tbsp dried chives
1 tsp salt
1 tsp pepper
8 slices of yellow american cheese
1 tbsp butter

Mix eggs, onion, chives, milk, salt, and pepper.  Whisk it up a bit with a whisk or fork.  Place a pan on low heat and melt the butter-pick up the pan and swish it around the pan while its melting-when its melted add the egg mixture. After 2 minutes add 5 slices of cheese:

After another 2 or 3 minutes break up the cheese and start folding the mixtures over onto itself:

Then after another minute or 2 I add the other 3 slices of cheese:

Again continue to fold the mixture on top of itself until finally you get this amazing result.  Total cooking time should be about 15-20 minutes with these:

I like to make anything into a sandwich so I toasted up some left over hamburger buns that needed to be used.  Side Bar: if you haven’t got on the cream cheese and egg bandwagon I suggest you jump on…NOW!

This is just a great start to any day:
