Mom’s Homemade Chicken Soup

When you are taking care of someone sick or if you just want a nice comforting meal check out my Mom’s good old fashioned Chicken Soup recipe below!

What You Will Need:
1 Lb of chicken breast, with bone and skin
1 Package of whole carrots, any of the packages from the grocery store, about 8-9 carrots
1 Package of whole celery stalks, again just any package from the store
1 Tbsp Salt
1 Tbsp Pepper
Water (amount varies)
1 lb of Ditalini Pasta (optional but I always add it!)
Parmesan Cheese (again optional but I always add it)

Slice all the carrots and celery stalks and place them in a dutch oven or regular deep pot with the chicken.  Fill the pot with water until the chicken is covered.  Cook on med heat for 45 minutes to an hour.  If your cooking in a dutch oven I keep the lid on, if your cooking in a regular deep pot then don’t keep the lid totally on, leave some room for steam to get out.  After about an hour or so remove the chicken, separate the meat from the bone and skin, (it should just fall off easily) shred the meat and place it back in the pot.  At this point also if you want to add the pasta do so now. Cook until pasta is done or another 15 minutes or so.

Serve, with some parmesan cheese, and Enjoy!! xoxoxoxo
wpid-20150720_205705.jpgTip:  When I save the leftovers I usually add some chicken broth to is as the pasta tends to absorb a lot of the broth.  Also you can reheat with some chicken broth as well.
