The perfect addition to any BBQ or gathering 🙂
What you will need:
1 1/2 pounds of pasta (I used Rotini Pasta)
11 Garlic cloves (chopped)
1 cup olive oil
1 med red onion (sliced)
8 oz of mozzarella, cubed (I used Polly-O)
4 cups of cherry tomatoes (sliced in halves)
First set a pot of water on the stove and bring to a boil to cook the pasta. Â While that is going saute your garlic in the oil until it becomes fragrant, be careful not to burn it, set it aside when it is done. Â When your water is boiling throw in your pasta until it is tender, strain and set aside as well.
Put the tomatoes, Onions, and Cheese in your serving dish and sprinkle in a DASH of salt, and I mean a DASH since the cheese is already salty, and pepper, I like to use a lot of pepper, almost a tablespoon, but you can just use as much as you like. Give everything a good toss, I like to actually use my hands for tossing here to really incorporate everything, but your call.
Then toss in your Pasta and Garlic and Oil and toss around until all ingredients are coated with the oil mixture. Â Taste to see if any more salt or pepper is needed. and that’s it!
