Pork Chops with Drunken Mushrooms

You want to make sure you are using an oven safe pan, most pans are oven safe these days but just throwing it out there beforehand because this recipe finishes off in the oven-gotta love a one pan wonder meal!. Side Bar-These drunken mushrooms also go great with steak 🙂

What you will need:
4 bonless center cut Pork Chops (about an inch thick)
Standard package of white mushrooms 15oz sliced (you can probably also use any type of mushrooms you like)
1/2 white onion chopped
6-7 cloves of garlic chopped
1 cup chicken broth (I use the low sodium kind)
1 cup of white wine (make sure its a dry white-like Pinot Grigio or a standard cooking wine you find in the supermarket-I love a good Moscato or Riesling but you don’t want to use them here!)
Salt
Pepper
1 1/2 tbsp of butter
3 tbsp of all purpose white flour

You want to liberally pepper one side of the chops…until you almost cant see the chop! Then lightly salt. This is going to make a nice pepper crust when we add them to the pan.

Get your pan nice and hot, on high heat, then add 1/2 tbsp of butter-swish around to coat pan. When the pan is nice and hot add the chops seasoned side down, you should start to hear a nice sizzle! While they are sizzling season the other side the same way

Leave them there for 3-4 minutes. Don’t touch them or move them. Then when its time to flip you should have a nice crust on them like so…

After another 3-4 minutes remove from pan and set them aside on a plate.

Lower the heat down to low and add 1 tbsp of butter and wine, take a wooden spatula or spoon and scrape any bits left over from the chops. Then add your onion, mushrooms, garlic-cook that down a bit-10 minutes-until onions are soft then add your chicken broth, another dash of salt and pepper, and simmer for another 15 minutes. Then 1 tbsp at a time add the flour. You want to stir the sauce after each tbsp after the third you should be able to push the sauce aside without really any liquid spreading like this…

If you feel the sauce is a little too thick for your liking then you can add a little more chicken broth. Remove from heat and add the chops back to the pan and nestle them into this sauce. Put the entire pan in the oven and cook for 25 minutes at 350, chops should have reached an internal temp of 140.

There you have it!! The sauce is so creamy and delicious we practically licked the pan!!
