Pumpkin Bisque

Fall flavors are amazing and pumpkin is no exception!!! 🙂

What You Will Need:
6 Cups Roasted Pumpkin, Fresh or Canned
1 Large Onion, Chopped
8 Garlic Cloves, Chopped
2 Tbsp Olive Oil
1 Tsp cumin
2 Tbsp dried thyme
1 Cup cheddar cheese, shredded
8 Tbsp heavy cream
2 Cans chicken stock
1  Cup water
Salt
Pepper

Heat oil in 5 qt dutch oven or large pot.  Satuee garlic and onion until garlic is fragrant and onion is softened, about 5-7 minutes.  Then add in pumpkin, chicken stock, water, thyme, dashes of salt and pepper, and cumin and bring to a boil.  Then cover and cook for 1 hr 30mins cooking on low.

Remove from heat stir in cheese and heavy cream, also taste to see if you need additional salt or pepper.
