Scallops used to intimidate me because they seem to be too delicate to cook. Luckily I got over this and found them to actually be easy and delicious! 🙂
What You Will Need:
1 lb Scallops, cleaned with muscles removed
1 Tbsp Olive Oil
1 Tbsp Butter
Salt
Pepper
Sauce:
2 Tbsp Butter (divided)
Olive Oil
3 cloves Garlic, chopped
1/4 cup White Wine
First your going to rinse your scallops and pat them dry with paper towels. Make sure you get a lot of the surface moisture because a lot of surface moisture won’t give you a good sear.
Heat 1 tbsp olive oil and 1 tbsp of butter on high heat. Salt and Pepper each side of the scallops and place them in the pan, they should start to sizzle right away. Don’t touch them for about 2-4 minutes then flip them-they should have a nice brown sear before you flip them. Do the same thing for the other side then remove them from the pan and set aside. Now onto the sauce….
Lower the heat to medium and add 1 of the tbsp of butter and garlic to the pan and saute about 1 or 2 mins until butter is melted and garlic is fragrant. Then add the wine, scraping up any of the bits that have stuck to the bottom of the pan, and cook down another 2 minutes until reduced. Then lower the heat to low add the other tbsp of butter and stir or whisk until it melts into the sauce. Return scallops to the pan and roll them around a bit to warm back up-another minute or so.
